I love soup, I will be making many varieties in the future because they are so delicious, easy, and healthy. Being such a wide variety there is always a soup for the season. In this case, I prepared a Yellow Squash Soup which is definitely an Autumn soup in my opinion : ) I modified this recipe from a few Squash Soup recipes I've come across, I prefer a soup with a deep flavor and I made the adjustments to fit my preference. As with any soup, it is very simple to adjust the flavor according to your preference, if you want a lighter flavor use less herbs, salt, and wine.
Ingredients: (makes roughly 6 servings)
- 6 medium sized Yellow Crooked-Neck Squash
- 2 Onions - Chopped
- 2 cloves Garlic - Chopped
- Thyme - 2 tsp. (I prefer fresh herbs, but dried is fine too)
- Sage - 1 tsp.
- Basil - 2 tsp.
- Black Pepper - to taste
- Sea Salt - 2 tsp.
- Flour - 2 tsp. (I prefer unbleached wheat flour)
- Dry White Wine - 1 cup
- 2 cups milk (For Vegan Recipe, substitute Cows Milk with Almond, Hemp, or Rice milk
Optional Topping: Chop some Chives, or the green ends of an Onion as a simple garnish.
Directions:
- Cut the ends off the squash, cut any skin that looks damaged in any way. Continue to cut 1/4 inch slices and set aside cut squash for later.
- In a large sauce pan, begins to sauté onions and garlic. After roughly 5 minutes, add squash, herbs, and salt. Cover with a lid, and stir occasionally for about 10 more minutes.
- Add the flour while stirring constantly, be sure to evenly distribute the flour to ensure no lumps.
- Pour in the white wine, stir the mixture and let the wine simmer for about 10 minutes. The alcohol content of the wine evaporates while simmering. Longer cooking equals more subtle flavor, I prefer my soup slightly on the strong side because I believe it promotes flavor of the entire soup.
- After the wine has simmered, remove from heat and allow the soup to cool until it is ready for puree.
- Add the Soup mixture with Milk into a blender or food processor and blend until pureed, or desired consistency is reached.
- Adjust any seasonings like herbs, salt, or pepper to reach completion
- To serve, heat gently before serving.
- If you desire to include the Optional Topping, prepare the topping while soup is heating.
